what you need:
2 tortillas
1/2 cup shredded turkey
1 tbsp cranberry sauce
2 slices of ham
1 tsp roughly chopped parsley
5 thin slices of brie
1 tsp. olive oil (optional)
salt & pepper

In a heated non-stick skillet, or flat pan, add olive oil. Spread the cranberry sauce over the tortillas, then add a slice of ham, turkey, and parsley over the cranberry sauce, season with salt and pepper. Add brie cheese and top off with another tortilla. Place quesadilla into the skillet and cook until golden and cheese has melted. Flip it over and cook other side.

Very Veggie Frittata

what you need:
8 eggs
1 cup milk
1/2 cup stuffing bread
2 cups leftover cooked vegetables: broccoli, cauliflower, string beans and any other veggies left

Beat eggs together and add milk, chopped parsley, salt and pepper. Add the bread cubes and the vegetables to the mix. Add the mix to a 10-inch non-stick skillet, previously heated with olive oil. Cook for 2 minutes and reduce heat to minimum. Top with grated cheese and let cook for 10 minutes, broil for 3 minutes.

what you need for six servings
2 cups shredded leftover roasted turkey
Two sliced stalks celery
1/2 cup chopped celery leaves
1 chopped apple
1 cup sliced seedless grapes
1/2 cup chopped toasted pecans

dressing:
1/2 cup non-fat greek yogurt
2 tbsps mayonnaise
1 tbsp honey
1/4 tsp salt
black pepper
One small celery root cut into matchsticks

In a bowl, toss the turkey, celery, the leaves, apples, grapes, and pecans until all is mixed up. Add all the dressing ingredients into a small bowl and whisk until combined. Add the celery root sticks last. Once ready, combine the salad with the dressing and enjoy!
